Peas and Cucumbers

Ingredients

  • 16 oz. package frozen peas or fresh shell peas
  • 2 tablespoons olive oil
  • 1 small red onion, sliced thin
  • 2 large English cucumbers
  • 1 small ham steak, cubed
  • Salt and pepper to taste

Directions

  1. Sauté red onion in olive oil until translucent.
  2. Add peas and continue to sauté keeping the peas crisp tender.
  3. Add cucumbers and cubed ham. Sauté lightly for 1-2 minutes.
  4. Serve warm or cold as a side dish or a salad.
