Recipe: Tomato feta pie

Tomatoes are versatile both in their identity as a fruit/vegetable and in the many ways they are used! They are the main ingredient in many sauces and condiments, are perfect on a salad or a sandwich and can even be used in pies!

Ingredients

  • 4 large tomatoes (2 ½ pounds), cut into slices
  • ¼ cup chopped onion
  • ½ cup feta cheese
  • 2/3 cup shredded reduced fat mozzarella cheese
  • 3 large eggs beaten
  • 2 teaspoons dried oregano

Directions

  1. Preheat oven to 425°F.
  2. Arrange 1/3 tomato slices (overlapping them) to cover bottom of pie plate.
  3. Sprinkle one-half of the onion over the tomatoes.
  4. Sprinkle on one-third of the feta and mozzarella cheeses. Repeat for a total of 3 tomato layers.
  5. In a bowl combine the eggs and oregano. Pour over pie.
  6. Sprinkle on the remaining feta and mozzarella cheeses.
  7. Bake for 45 minutes. Let the pie sit 30 minutes, cut into wedges and serve!
