Marinated Green Bean Salad
Green beans make for a healthy and crunchy snack for even the pickiest of eaters! They can be eaten raw for the crunch or can be roasted and sautéed with olive oil for other flavors. Either way, green beans are one of the easiest vegetables to cook and contain nutrients like Vitamins A and C. Make sure to add green beans to your next meal!
Makes 8.5 servings
Ingredients
- 1/3 cup green peppers, washed and chopped
- 1/2 cup red onions, thinly sliced and quartered
- 1 1/3 cup green beans, cut, frozen
- 1 1/2 cup corn, frozen or fresh
- 1 1/3 green peas, frozen
- 2/3 cup sugar
- 1/2 cup white vinegar
- 1/8 tsp salt
- 3/8 tsp pepper
- 3/8 tsp garlic
- 1/3 cup vegetable oil
Instructions
- Place frozen vegetables in colander to thaw and drain while preparing raw vegetables.
- Prepare all raw vegetables and place in a bowl.
- Place thawed frozen vegetables in bowl with raw vegetables
- In saucepan, heat the next five ingredients until the sugar is completely dissolved.
- Remove from heat and whisk in oil.
- Pour dressing over vegetables and stir to coat. Cover with wrap and refrigerate overnight.
- Toss and serve.
