Beth Schwenk is an Associate Instructor and the Dietetic Internship Supervisor in the Department of Health Behavior and Nutrition Sciences at the University of Delaware where she has been a faculty member since 2011. Prior to coming to the University of Delaware, she worked as a Registered Dietitian in weight management, primarily working with pre- and post-bariatric surgical patients.  Her interest in nutrition began during her first career at the Philadelphia Zoo as a primate keeper and Nutrition Operations Assistant.

 In her current position, Schwenk teaches the three required foodservice courses to undergraduate Nutrition majors. As the Site Supervisor of the Dietetic Internship program, Schwenk assists the Director in coordinating preceptor availability and monitoring the foodservice rotations of the interns. Schwenk has been an active member of the Delaware Academy of Nutrition and Dietetics (DAND) since her time as a graduate student.  She has held the elected positions of the Nomination & Governance committee (3-year term) and President (3-year term).  Currently she is the Delegate for DAND to the House of Delegates of the Academy of Nutrition and Dietetics.
