New Rolling Rooster food truck hits UD campus

Dining Services is excited to introduce The Rolling Rooster, a new food truck that’s rollin’ with flavor across the University of Delaware campus. Designed to bring variety and excitement to campus dining, The Rolling Rooster features a rotating menu with five flavorful concepts: Shakshuka, Seafood Favorites, Specialty Tacos, Dippin’ Melts and Elevated Brunch Classics.

Whether you're craving a savory brunch bite or a bold taco twist, there's something for everyone. Even better, The Rolling Rooster accepts meal exchange, points, Flex, debit and credit, making it a convenient and delicious option for students, faculty and staff on the go.

But the Rolling Rooster is not just about food, it’s also about the people behind it. Meet Thomas Jenkins, the chef and heart behind The Rolling Rooster. With over 30 years in the hospitality industry and 10 years as a professional chef, Jenkins brings a wealth of experience and passion to the food truck. For him, cooking is more than a job, "it's a way to connect.”

“Food is a language we all understand,” he said. “I’m most excited that The Rolling Rooster gives me the chance to interact directly with students and guests while doing what I love.”
