A taste of home at UD

10:03 a.m., March 11, 2005--The first featured entry in Dining Services’ “Recipes from Home” program is an apple spinach salad, created by Melissa Scott, a nurse in UD’s Student Health Services, whose daughter, Jacqueline, is a junior criminal justice major at the University.

UD parents are invited to submit their favorite recipes to Dining services via an online form, and selected recipes will be featured in the dining halls throughout the semester. Popular recipes may become part of the regular menu cycle.

Ingredients in the winning salad include fresh spinach, with Granny Smith apple slices, cashews and raisins in an apple cider vinaigrette dressing.

Earlier this week, Scott, her husband, Richard, and Jacqueline and friend Mike Custodio sampled the salad at Rodney Dining Hall’s salad bar.

UD parents interested in submitting recipes can fill out the form at [www.udel.edu/dining/forms/recipe_form.html]. Families who submit selected recipes receive a congratulatory letter and an invitation to join their son or daughter for the meal featuring their recipe. Recipes also will be included in an online cookbook.
