HIRM students cater fund-raising dinner

Tuxedo-clad YoUDee serves entrees.
4:29 p.m., Oct. 7, 2005--An assortment of Cajun-themed dishes were a hit at the Ministry of Caring fund-raising dinner hosted by UD hotel, restaurant and institutional management (HRIM) students and faculty Sept. 25 at II Cappuccino in downtown Wilmington.

More than 110 persons came to the dinner benefiting the Emmanuel Dining Program. The menu included gumbo, Cajun catfish fillets, corn pudding, green beans, sweet potato rolls, bread pudding, coffee, tea, soft drinks and other refreshments.

Diners seemed delighted with the food, the students and YoUDee, who made a special appearance at the event, Pamela Cummings, associate professor of hotel, restaurant and institutional management, said.

“YoUDee came in chef's clothes, checkered pants and a chef's coat,” Cummings said. “He looked great.” Later on, YoUDee changed into a tuxedo and served a few entrees, she said.

“There were plenty of clean plates,” Cummings said. “The best part of the evening, in my opinion, was that Patrick Gaffney, the director of the center, sat down and told the students all about their needs and how many people are helped out of dire circumstances because of their programs, including the international dinners,” Cummings said. “Pat is very impressive, and I know it left a mark on our students.”
