Apple Jicama Salad

 

Apples grow on trees and are among the world’s most popular fruits. Apples are high in fiber, vitamin C, and various antioxidants. They are also very filling, considering their low-calorie count. Studies have shown that eating apples can have multiple benefits for your health! Check out our apple recipes for some healthy and yummy springtime meals!

 

Makes 6 servings

 

Ingredients


Salad

  • ¼ cup pepitas (pumpkin seeds), roasted (optional)/alternative: sunflower seeds shelled 
  • 4 cups peeled and diced jicama (approximately 1 large jicama) 
  • 1 medium apple, diced 
  • 1 cup grated carrots 
  • 2 tablespoons chopped green onions 
  • ½ cup grated red cabbage 
  • 2 cups finely chopped kale 
  • 1 tablespoon finely chopped cilantro 


Dressing

  • 4 tablespoons olive oil 
  • 2 tablespoons apple cider vinegar 
  • 2 teaspoons Dijon mustard 
  • 2 small cloves garlic, minced (or ½ teaspoon garlic powder) 
  • ½ teaspoon salt 
  • ¼ teaspoon pepper 
  • Optional: 2 tablespoons of honey (or to your liking) 

 

Directions

  1. In a small frying pan, roast pepitas over medium heat, stirring constantly until browned.  Remove from pan and allow to cool.  
  2. In a large bowl, mix all vegetables and pepitas. 
  3. In a small bowl or jar with lid, mix all ingredients together. 
  4. Add dressing to vegetable mixture and stir to distribute dressing evenly over vegetables. 
  5. Cover and chill for 30 minutes prior to serving.
