“Meatless Monday is a worthy investment for both our campus and our nation because it is an easy way to decrease meat consumption,” said Snell, a senior biochemistry major. “It has so many positive environmental, health and animal welfare effects.”

Snell’s goal to promote Meatless Monday on campus has had some success.

“Having the knowledge of how our diet and lifestyle affects us is giving us the power to make thoughtful choices in how we consume,” said Snell, who is also a founder of the UD Prenatal Support Group, treasurer and teacher for UD Yoga Club, board member of Down to Earth Food Co-Op, vice president of the American Society of Biochemists and Molecular Biologists Chemistry, a teaching assistant and tutor.

“It's an easy way to make a difference, particularly for the environment, once you realize the relationship between what and how we consume,” Snell said. “The overall goal is, of course, to reduce meat consumption as a whole, no matter what day a week, but Meatless Monday is a catchy and easy tool to give people resources – recipe ideas, fun facts, et cetera – to do so successfully.”
