FLSA Status: Nonexempt Revised July 1, 1999 NATURE OF JOB: Under general supervision manages the Hotel and prepares meals for shipboard consumption by up to 20 people. Maintains cleanliness of galley and berthing area. The principal emphasis is on food preparation and basic management abilities aboard ship traveling for long periods of time or in port. EXAMPLES OF WORK: Depending on divisional assignment, the following are typical examples of work: * Prepares three meals daily for up to 20 people; * Maintains cleanliness of galley; * Distributes clean linens (bedding and towels) to berthing spaces; * Picks up soiled linen and delivers to laundry contractor; * Maintains cleanliness of passageways and berthing spaces; * Purchases and orders all food and supplies to stock galley; * Performs other related duties as assigned. EDUCATION, EXPERIENCE AND ABILITIES: Requires a minimum of a high school diploma or GED and one year of experience in food preparation either in an institution or aboard ship. Requires knowledge of safe food handling practices, ability to prepare nourishing and balanced meals, and basic management of galley/kitchen supplies and stores. Formal culinary training preferred. OCCUPATIONAL/ENVIRONMENTAL EXPOSURES: The physical environment requires the employee to work exposed to all conditions found aboard a ship at sea. This includes heavy weather, extreme heat/cold, and all forms of precipitation. Occasionally required to use personal protective equipment to prevent exposure to hazardous materials. SPECIAL REQUIREMENTS: Must be able to perform normal duties aboard ship: ascending and descending ladders; handling mooring lines; opening and closing watertight doors; wearing an emergency breathing apparatus; reaching, handling, grasping, and lifting lifesaving and fire fighting equipment, etc. Must meet the US Coast Guard (USCG) physical requirements for merchant seaman as outlined in 46 CFR and given on USCG Form CG-719K. Must be able to spend extended periods away from home port, as much as 2/3 of the ship's sailing schedule (approximately 140 days) for up to three weeks at a time. Must be sensitive to the scientific mission of the ship. Must pass a preemployment drug screening test and be willing to be enrolled in a Department of Transportation random drug testing program.
