Celestún
	And we are off to see the flamingos, the mangroves and the eye of water at Celestún, a nature preserve on the Gulf of Mexico.  We get to have lunch at a restaurant right on the beach where you can request anything from a whole fried fish (yes! it is served whole--head, fins and tail!) to conch.  The food may sound strange but this is one of the best seafood restaurants in the world.
