Assessments - Nutrition & Dietetics
Mission Statement
To provide a challenging and high quality curriculum which prepares graduates to successfully enter a CADE accredited dietetic internship or a post-baccalaureate program or a variety of employment opportunities related to nutrition and food.
Learning Goals / Outcomes
Graduates of the Nutrition & Dietetics program will meet identified learning goals:
- Calculate and critically evaluate nutrient and calorie composition of foods
Gen Ed goal #1c (quantitative reasoning), 2, 3
Assessment:
- Indirect: course evaluation – qualitative
- Direct: rubrics for projects in NTDT 200, 201, exams in 400, 401 (all majors), and exam in NTDT 421 (DIET & NS majors)
- Create written educational materials to disseminate food and nutrition knowledge and/or will present persuasive presentations to peers, faculty and/or community stakeholders
Gen Ed goal #1a (oral comm.), 1b (written comm.), 2, 9
Assessment:
- Indirect: course evaluation – qualitative
- Direct: Exam in NTDT 400 (all majors), 445 (APN, DIET) and a rubric for written projects in NTDT 201 and restrictive elective (NTDT 305, 350, or 420)
- Analyze food patterns and make recommendations for health promotion and disease prevention

Assessment:
- Indirect: course evaluation – qualitative
- Direct: final exams in NTDT 200, 400 and 401 (all majors)
