REQUIREMENTS: Bachelor's degree in hospitality and/or hotel and restaurant management preferred. Strong background in upscale, formal dining and related service techniques desirable. Should have a minimum of three years' experience as a dining room manager/maitre d' and a working knowledge of wines and wine service. Extensive experience in the use of personal computers and Windows 95. Must be skilled in a wide variety of service methods including French, Russian and American styles. DUTIES: Manage a 65-seat upscale dining room and train students in all aspects of formal dining room and beverage service. Additional responsibilities include daily cash reconciliations and maintain logs for credit and departmental charges. Report directly to the general manager of the Food Service Laboratory. Work closely with the executive chef to ensure quality education in food service education while maintaining an efficiently run food and beverage operation.
