                             'Nova to Go'
             Gourmet takeout arrives at popular restaurant
     
     Vita Nova, the student-operated restaurant of the
Hotel, Restaurant and Institutional Management Program, is
proud to announce a new addition-Nova to Go.
     Now patrons can drop in and pick up some of the
favorite entrees that have made Vita Nova so popular, or
they can get freshly made salads, sandwiches, coffees and
featured desserts. The hours are from 11 a.m.-6 p.m.,
Mondays through Fridays.
     "We wanted to make our menu more available to the
campus community since we frequently can't accommodate
everyone who wishes to come to our lunch buffets and
dinners," manager Jim Lynch said. "Having unusual,
delicious, fresh, carefully prepared food to go increases
our service and expands educational opportunities for
students enrolled in our program. We have incorporated Nova
to Go as an extension of our current curriculum, and our
students can now learn about about another kind of food
operation in a different setting, in terms of cost control
and marketing."
     A display case and menu featuring the specialties of
the day flank the entrance to the Vita Nova restaurant, on
the second floor of the Trabant University Center, so that
it is easy to drop in and pick up a complete dinner or a
muffin and cappuccino, all packed in distinctive containers.
     The take-out menu offers unusual salads, such as char-
grilled portabella mushrooms with balsamic vinegar and fresh
herbs, available in half-pints, pints and quarts. A tossed
specialty salad with market-fresh ingredients and
accompaniments also is available in half or full orders.
     Sandwiches, such as prosciutto with fresh mozzarella,
basil, olive oil and black pepper on a banquette, including
a side salad, cost from $2.95 to $3.50.
      Entrees, such as the popular lasagna roulade or breast
of chicken with coconut crust and pineapple ginger salsa,
are available with a choice of two 4-ounce side salads for
$4.95.
     Other entrees will change daily according to what is
available and in season, Lynch said.
     For snacks and hors d'oeuvres, up-scale dips and
spreads in half-pint containers also are at the ready for
$2.95.
     In addition, tempting desserts are also on display, and
fresh muffins, bread and cookies are baked daily, Lynch
said.
     Coffee lovers have a choice of coffee, espresso or
cappuccino.
     Paying is easy, as cash, FLEX and credit cards, are all
accepted, and customers may order in advance by telephoning
831-0500. Monday, March 10, the new phone number will be 831-
3300.
     "The welcome mat is out, and we encourage people to
drop in and try our quality take-out food with a
difference," Lynch said.
