FDR to offer special menus
Next Monday, Wednesday and Friday students of the Coordinated Program
in Dietetics (CUPD) will prepare delicious, healthy food choices in the
Faculty Dining Room to celebrate National Nutrition Month.
The theme chosen for this year's program is "Take a Step in the Right
Direction...Treat Yourself Right!" The emphasis of the annual program is on
fitness and developing healthy eating habits.
University Dining Services is sponsoring this program that features
lunchtime menu selections lower in fat, cholesterol and sodium.
The students conducted a survey in the Faculty Dining Room to find out
about the nutritional needs of the patrons. Of those surveyed, 85 percent
requested menu items that were lower in fat, cholesterol and sodium; 63
percent wanted ethnic foods; and 68 percent wanted nutritional information.
CUPD students will provide nutritional information such as salad "do's
and don'ts," recipe adjustments and pamphlets on nutritious snacking.
"Take a Wok on the Wild Side," the theme Monday, March 15, will
feature Chinese cuisine, such as egg drop soup, sweet and sour seashell
salad and shrimp lo mein.
On Wednesday, March 17, "Take a Hike South of the Border" will include
spicy chicken fajitas, fiesta rice, homemade chili, herbed pasta salad and
southwestern cornbread.
"Take a Stroll in Little Italy" will conclude the week on Friday,
March 19, with spinach cheese manicotti with marinara, italian vegetable
soup and orzo pepper salad.
For those who would like to have their diet analyzed for three days, a
daily contes will be conducted. To win, diners must guess the correct
number of calories in one of the special entrees.
The special menu will available in the Faculty Dining Room next week
between 11:30 a.m.-1:30 p.m.
