Treat yourself to heart-healthy meals

     During the week of March 16, as part of National Nutrition
Month, students of the coordinated undergraduate program in
dietetics will kick off a healthy eating program entitled "Treat
Yourself Right."
     The ongoing program at the Faculty Dining Room is sponsored by
Dining Services to provide healthy menu selections to lunchtime
customers.
     A recent survey conducted by the students revealed that the
major nutritional concerns of Faculty Dining Room patrons include
weight management, high cholesterol and cardiovascular disease.
Patrons expressed a desire for menu items with lower fat,
cholesterol and sodium.
     A third of the patrons surveyed said they select the salad bar
most frequently. On Monday the restaurant will feature a "Salad Bar
Extravaganza."
     Also available will be vegetarian chili, which contains 227
calories and 20 percent of them from fat. On Wednesday, chicken
breast citron (flavored with curry, white wine and fresh oranges
and containing 190 calories-19 percent calories from fat)  will be
offered along with samples of a yogurt cucumber dip with crisp pita
wedges. Friday's menu has a low-fat and low-cholesterol entree
called Louisiana shrimp and etoufee (229 calories-12 percent from
fat).
     The survey also indicated that 31 percent of the customers
regularly purchase soup, so a special heart-healthy broccoli soup
will be available on Friday.
     For those who feel desserts are mandatory, samples of low-fat
chocolate and yellow cake will be offered on Friday.
     Lunch is served in the Faculty Dining Room from 11:30
a.m.-1:30 p.m. During the week of March 16, nutrition information
and recipe cards for the featured food items will be available.
