4:34 p.m., April 27, 2007--The Courtyard Newark-University of Delaware hotel will feature a special menu for Mother's Day Brunch, with seatings at 11 a.m. and 1:30 p.m., Sunday, May 13.

The buffet will include shrimp cocktail, apple- and blueberry-stuffed pancakes, hand-carved honey ham, slice-top sirloin with au jus, omelets made-to-order, tilapia with cucumber salsa, bacon and sausage, Waldorf chicken salad, fresh-fruit salad, mandarin-spinach salad with raspberry vinaigrette, spring-root vegetable medley, broccoli au gratin, a chocolate fountain for dessert and much more.
