Cookbook, calendar celebrate HRIM program

9:22 a.m., Dec. 6, 2005--UD is celebrating its Department of Hotel, Restaurant and Institutional Management (HRIM), named one of the top 10 hospitality programs in the U.S., and Vita Nova, its student-run, award-winning restaurant, with two new publications--the 2006 UD Engagement Calendar and a limited edition cookbook, Taste of Class.

In Taste of Class, Vita Nova celebrates its 10th anniversary by sharing some of its culinary secrets and recipes in a lavishly illustrated cookbook--a must-have holiday gift for those who enjoy gourmet cooking.

From appetizers, such as smoked salmon and shredded potato cakes, to desserts, such as chocolate bombes, the cookbook offers unusual recipes made famous at Vita Nova under the guidance of Joe DiGregorio, executive chef and director of education for food service laboratories, and sous chef Debbie Ellingsworth, who created the bread and dessert recipes. Each main recipe is photographed in color with clear, detailed instructions on its preparation.

At the request of the staff of Vita Nova, the cookbook is dedicated to the memory of Mary Hempel, long-time director of the Office of Public Relations. The dedication reads, "Mary J. Hempel, Assistant to the President and Director of the Office of Public Relations at the University of Delaware, nurtured the idea for this book, encouraged its growth and supervised its progress. She died unexpectedly as it neared completion. Mary left her mark on many parts of the University, including this book. It is dedicated to her."

The cookbook was designed by Molly Chappell, art director in UD’s Office of Public Relations.

The colorful calendar spotlights the many facets of the HRIM program, from the elegant and full-service facilities of the Courtyard Newark-University of Delaware hotel to the ambiance and festive food of its Vita Nova restaurant. The focus also is on the students as they are shown learning by doing, from running the front desk at the hotel to running the range in the Vita Nova kitchen.

The introduction to the calendar describes the HRIM program, which began in 1988, from its teaching facilities to its international opportunities. Also featured are companies and professionals in the field, such as J. Willard Marriott Jr., who are associated with HRIM. The calendar also marks important dates at UD during the academic year.

The calendar was designed by Lane McLaughlin, art director in the Office of Public Relations.

Taste of Class costs $24.95 and the calendar costs $19.95, and they may be purchased together for only $39.95. The publications are on sale now--in advance of publication--on the University Bookstore’s web site [www.udel.edu/bookstore] at the link for merchandise. They are expected to be in stock by the end of this week.
